If you have control over your light and can adjust contrast try HP5 or Tri-x
pushed to 3200 in Microphen or Rodinal.  You will get some large grain, but
contrast gains are huge so initial light needs to be soft.

If you want to use the 3200 speed films try shooting them above 6400 and use
a relatively undiluted developer say 1:1.  Contrast is an issue here as
well.

Really huge grain is a problem with modern films.  If you want to try with
your medium format then try Verichrome Pan pushed to 400 or 800 then print
only part of the negative.  Grain will be fairly large and contrast will not
be as much of a problem as in 35mm.  Verichrome Pan is one of the last old
style films so responds well to development tricks including developing to
really thick negatives.
