Paul, think big.  The 800mm f/6.3 Telyt-S was made in a Visoflex version :)
 
I found the 280mm f/4.8 Telyt-V was a good choice as long as you keep the front element shaded.  I've also heard of (and been unsuccessful finding) a book of photographs of birds, made with a Viso and 400 f/6.8; the author's name is Ury, I think.  I suspect with the chimney finder you'd be working from a tripod, though.
