For processing (both color and b&w) in Paris, I highly recommend Picto Paris. 
 It is a thoroughly professional lab by any standard.  It has several 
locations in Paris.  You can check out its website at http://www.picto.fr.

One central location is at 31 Boulevard Edgard Quinet near the Bastille.  
This is also very close to the Paris photo district.
