I see a couple of advantages:

- - possibility of control at the film development stage
- - B&W film is archival, color film is not

I prefer to start with a properly exposed and developed B&W negative when
I want a B&W print. This was true when I used a wet darkroom for printing
and remains true in the scanning/Adobe/inkjet environment.
