I live in Belgium and often venture with my equipment into all the countries you mention. I assure you that you are in no particular risk here, as long as you take common sense precautions (do not leave the bag sitting around etc.). I am always amused when I read American guide books to European countries that warn against crime of one type or another. The reality is that you are much more likely to be relieved of your possessions (and worse) in any U.S. city than in the countries you plan to visit.

As for a bag, I would look into the Reporter series. It is truly minimalist and would carry you Leica perfectly.
