Gazpacho! There are many Asian folks in our neighborhood and a friend of mine at a Vietnamese restaurant told me that I can make cold pho with a good spicy broth and just flash boil some vermicelli noodles then chill them under cold water in a colander for a cool bowl of noodle soup. I hadn't thought of that before and I love pho.
