Normally the "giblets" -- various organs such as heart and liver and kidneys, and the neck -- are wrapped in paper and placed inside. Not very many people want the giblets. Usually they are just discarded. But if you are one of the people who does want them, it's very hard to go back to the slaughterhouse to find the giblets that came from your frozen bird. So poultry processors pack the giblets inside each frozen turkey and chicken and goose, simply because they might possibly be needed and it is not a huge amount of work. The EXIF data in a digital image is just like the giblets from a frozen turkey: you probably don't want it, but if you do, there it is, and it's easy to discard it if you don't want it.
