I use quite a bit of Tabasco's "Jalapeno" sauce and used to use their 
"Chipotle" sauce which I have not seen for a long time. I also like 
Melinda's XXXXX Reserve, West Indies Creole. I have a bottle of Dave's 
Insanity which is beyond hot....used very sparingly
