Most of the hotels that I have been in have conference rooms with
ceilings that range from 10 feet to 40 feet in height.  If you are doing
two person grip and grins then you can not get a successful bounce at
the correct distance with a normal lens, way too much eye socket shadow.
Then there is the issue of having an effective 20 foot range instead of
five feet for direct flash.

Really, for times when you have to produce an image with no possibility
for retake and the fear of the organizers mother, direct flash balance
close to ambient light level is by far the preferred method.  I say this
especially for someone who doesn't do flash.

I can imagine the training conversation.  OK, it is sort of like
billiards.  You have to imagine your light bouncing at an oblique enough
angle that light flows directly into your subjects eyes...

In a residential setting with ceilings in the 8-10 foot range then the
Metz flashes with their front light set and bounce either from above or
behind you can do amazing things I agree.

No offense, you probably already know this, but bounce the flash off 
the ceiling
or your shots will end up looking like a police lineup. I usually set 
the flash to
- - 1.5 stops., makes things look a little more natural.

PS: you can't bounce the SF20. How about a Metz 32-2z?
