DOF is basically acceptable sharpness. Your are limited in the ability to produce/see "detail" by many factors, lense, film/digital sensor, developing, printing method/medium/media and certainly the viewing resolution of the eye. The "standard" COC was chosen with the viewing resolution of the eye in mind, such that you view a print at a distance equal to the dimension of the diagonal of the print.
