Yes sushi, but can you get REALLY fresh salt water fish in Colorado? Fresh enough to eat raw? In Japan, I have eaten sashimi when the rest of the fish was still alive! Lobster and shrimp too. They would cut up the tail meat of the lobster, season it, put it back in the tail, and have the lobster crawl to the patron. I needed a few shochus before I could take that.
