In our county there is a law that all food workers must wear plastic gloves because of a Hepatitis A outbreak in 1988. So when I started to take pictures they became concerned thinking that I was going to be sending it in to the Health Dept. I believe they were actually wearing gloves but were worried that I might catch a split second with them having the gloves off. Once I told them the truth they all relaxed but of course we watched our meals closely. At a restaurant last week, I went back into the kitchen to photograph the kitchen help. They were agreeable and posed for me. One of them asked "are you from a magazine?" Without thinking I said yes, and continued. First thought was maybe they're cooperating because they think that - if I told them I was just taking pictures for my PAW (they'd *never* understand that...<g>) then things would not go as well. Better to lock it down, so to speak. What do others do in spontaneous, candid situations?
