For a rare image that has internal "sparkle" then the Epson premium glossy does a great job of well glistening. I have not been able to feel good about the limited number of other papers that I have tried: Kodak, Ilford,and Luminos in the main. However I think the content of your images will drive what paper works for you. Regarding photoshop the best way to learn is sit down and use the tools, you are only burning electrons.
