FWIW, in 5x7, 4x5 and 6x9 I usually TRY not to stop down past the diffraction limit of the particular lense - IF it doesn't hammer the DOF (hereafter spelled D**). And yes, swings and tilts help to put the available depth where you need it. I also have spiffy little charts that shows me what f/stop I need in order to reach a particular COC, or to reduce COC to a theoretical minimum (diffraction included). A handy deal for the mathematically impaired artist :-) There are two great articles on how to do it in an old Photo Techniques, one I believe by the heretofore mentioned Harold Merklinger.
