During the grand opening of Denver Pro Photo, I asked Ken Owen, Jobo's Technical Sales Manager (keno@jobo-usa.com) about max liquid capacities for Jobo rotary processing. He told me that you can keep filling up the drum until liquid starts pouring out the other end of the Jobo Lift! He assured me that the added liquid would circulate just fine. I didn't ask about hand rolling, but I'd probably fill the drum up about half way: For the #2521 tank, that comes out to about 800 ml--more than enough liquid capacity to process 6 4x5 sheets in Xtol at 1:3 dilution or HC110 dilution B and probably 1:1 D76 as well, but better double-check the Kodak D76 datasheet.
