You might like to try "Dialogue with Photography" by Paul Hill and Thomas 
Cooper (two respected UK 'art' photographers).   The book features interviews 
with Paul Strand, Man Ray, Cecil Beaton, Lartigue, Brassai, Kertesz, George 
Rodger, Cartier Bresson, Doisneau, Helmut Gernsheim, Brett Weston, Manual 
Alvarez Bravo, Gene Smith etc. - 21 in total!   There are no photograph by 
the people interviewed at all.   My copy was published in the UK by Thames & 
Hudson in 1979 but was printed in the US.
