They have the equipment they need to do the job and nothing more. What separates the pros from the rest is not their accessories, but the fact that photography is their job. They not only have to take the photographs but market them, too, and keep records of everything. The cameras and lenses are the equipment they need to do their jobs - just like a doctor's stethoscope or a carpenter's tools. They buy the best they can afford because they will have to last long enough to generate the money for replacements.
