Thanks to all who responded to this post.  It was a big help.  When I shoot
with my M6 this isn't much of a problem because of the way it meters.
Except in extreme situations, I just go with it.  Where I get screwed up is
when I'm using my Pentax Spotmeter with my M3 or Hasselblad (which is why I
was quoting EV values in my example).  I wind up making myself crazy
metering a hundred different elements in a scene and then don't know what to
expose for.  (The example I used in my post was obviously well within the
range of the E100S as Peter observed but you get my point.)  Metering for
the highlights will now become my new mantra.  Makes sense.

For reasons I can't really explain I almost always underexpose my images.
I've gotten to the point that whatever I decide on I shoot and then bracket
open in half or full-stop increments another couple of frames.  It gets
expensive when I'm shooting 120 but as we all know the film and processing
is the cheapest part of the expedition.
