Remember that Polar Bears and snow aren't 18% gray, so watch your exposure or
else your final images will have gray (not white) animals and snow. 

Ask Ted for the specifics.  (Sources say snow should be overexposed from 1 to
2 stops from the meter reading to appear white and not gray, but I'll always
go for answers to the man with the experience!)
