Spirits do not appreciate in bottle as *good* wine will. They will, however, hold for huge chunks of time w/o showing appreciable change. Beer, by comparison, begins to degrade (albeit slowly) from the moment it is packaged. Keeping it refrigerated till drinking will keep it good longer. In summary, drink your beer fresh, dont worry about spirits for many years, and taste cellared wine as you go to assure drinking it at its peak before it begins its long trip downhill to the vinegar that all wine eventually becomes. - -- Roger mailto:roger@beamon.org This is one of those cases in which the imagination is baffled by the facts. -- Winston Churchhill
