My strongest piece of advice for your trip is to manage a meal at Rancho 
de Chimayo, a 40-minute drive north of Santa Fe. I consider it to be the 
most consistently excellent traditional-style Mexican restaurant in the 
country. And the chiles grown there -- Chimayo -- are like nothing you 
have ever tasted.
